Red Grapes:
- Aglianico: High tannins. Red and dark fruits.
- Barbera: Low tannins with red and dark fruits and black pepper.
- Blaufränkisch: High tannins. Dark fruits.
- Cabernet Franc: Medium tannins, red fruits and floral and sometimes leafy.
- Cabernet Sauvignon: High tannins, dark fruit, floral and herbaceous;
- Carignan: High tannins, dark fruit, spicy, earthy.
- Cinsault: Low to medium tannins. Red fruits
- Corvina: Low to medium tannins. Red fruits and floral
- Dolcetto: Medium to hight tannins. Red fruits and floral.
- Gamay: Low tannins, red fruits.
- Grenache: Low to medium tannins with red fruits. Higher alcohol.
- Malbec: Medium to high tannins, red, dark fruit and floral;
- Merlot: Medium tannins, both red and dark fruit, higher alcohol (due to being a grape that accumulates more of sugar);
- Montepulciano: Medium to high tannins with red fruits.
- Mourvèdre: High tannins, with dark fruits and floral;
- Nebbiolo: High tannins with red fruits and floral
- Negroamaro: Medium tannins with dark fruits.
- Negro di Troia: High tannins. Red fruits with black pepper.
- Nero d’Avola: Medium to high tannins. Red and dark fruits
- Petit Verdot: High Tannins, dark fruit and spicy
- Piedirosso: Medium tannins with red fruits.
- Pinot Noir: Low to medium tannins, red fruits (especially cherry).
- Primitivo (Zinfandel): Medium to high tannins. Red and dark fruits.
- Sagrantino: High tannins. Red and dark fruits.
- Sangiovese: High tannins with red fruit and floral.
- Schiava: Low tannins. Red fruits and floral
- Syrah: Medium to High tannins. Dark fruits with some red and black pepper.
- Tannat: High tannins with dark fruits;
- Teroldego: Medium tannins with red and dark fruits.
- Trousseau: Low to medium tannins with red fruits;
- Zweigelt: Medium tannins. Red fruits
White Grapes:
- Arneis: Most common fruity. Low to medium acidity
- Assyrtiko: Most common fruity. High acidity.
- Catarratto: Most common fruity with high acidity
- Chardonnay: All kinds of style. Fruity, oaked and with malolactic fermentation. High acidity;
- Chenin Blanc: Most common fruity, from bone dry to sweet. High acidity
- Cortese: Most common fruity with high acidity.
- Falanghina: Medium to high acidity. Most common fruity.
- Fiano: Most common fruity and nutty. Medium to high acidity
- Furmint: Most common fruity with high acidity. Very famous for Tokaj.
- Garganega: Most common fruity with high acidity
- Gewurztraminer: Most common fruity, on the tropical side. Higher side of alcohol and low acidity. From bone dry to sweet.
- Grechetto: Most common fruity. High acidity
- Greco: Most common fruity. Medium to high acidity.
- Grenache Blanc: Most common fruity. Low acidity and high alcohol;
- Grillo: Most common fruity with high acidity.
- Grüner Veltliner: Most common fruity. High acidity
- Marsanne: Most common fruity. Medium acidity.
- Melon: Most common fruity. High acidity
- Müller-Thurgau: Most common fruity. Medium acidity
- Passerina: Most common fruity. High acidity
- Pecorino: Most common fruity. High acidity
